Ingredients
- 1 tbsp butter
- 1 cup uncooked quinoa
- 2 cup veggie or chicken brith
- 2 tsp chopped garlic
- 2 tbsp chopped fresh cilantro or parsley
- 1/2 tbsp chopped fresh thyme
- 1/4 tsp salt
- 1 small onion, finely chopped
- 1 dash fresh lemon juice
Directions

1Sauteed onion and garlic first.

2Add thyme.

3Melt butter in a saucepan over medium heat.

4Add the quinoa and toast, stirring occasionally, until lightly toasted, about 5 minutes.

5Stir in broth and bring to a boil.

6Reduce to simmer, cover, and cook for 15 minutes or until quinoa is tender.

7In a bowl, toss quinoa together with garlic, onion, cilantro, and thyme.

8Sprinkle with lemon juice and serve.
