- 4 racks of lamb (1 to 1 1/2 lb. each) trimmed
- 2 Tbsp. Dijon mustard
- 1 c. soft bread crumbs
- 1/4 c. minced fresh parsley
- 1/4 tsp. salt
- 1/4 tsp. pepper
- /4 c. butter or margarine, melted
- 1 garlic clove, minced
Directions

1Preheat oven to 350°.

2Place lamb on a rack in a greased large roasting pan; brush with mustard.

3In a small bowl, combine the bread crumbs, parsley, salt and pepper.

4Press onto the meat. Combine butter and garlic; drizzle over the meat.

5Bake, uncovered for 35 to 40 minutes or until meat reach desired doneness.

6Yield: 8 servings.
