  • 7 tablespoons milk
  • 7 tablespoons butter softened
  • 2 eggs
  • 5 1/16 tablespoons lemon juice
  • 2 9/16 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • salt

Directions

    Preheat the oven to 180C.

    Combine the milk, butter, eggs, and lemon juice in one bowl.

    Combine the flour, sugar, baking powder, and a pinch of salt in another bowl.

    Place the dry ingredients in the bowl with the wet ingredients and stir quickly to combine.

    Divide the batter into three bowls: add a few drops of red food coloring to one bowl, a few drops of blue food coloring to the second bowl, and leave the batter in the third bowl as is.

    Fill the muffin liners first with approximately 1 tablespoon of each of the three batters, first the red batter, then the blue batter and then the plain batter.

    Bake the muffins for approximately 25 to 30 minutes.
