Raisin Caramel Pie

  • 1 c. raisins
  • 2/3 c. sugar
  • 2 eggs, separated
  • 1 can evaporated milk, plus water to make 2 c. or 2 c. rich milk
  • 1 tsp. cinnamon
  • 1/2 c. water
  • 1/4 tsp. salt
  • 1/4 c. cornstarch

Directions

    Boil the raisins, sugar, water and salt.

    Boil for 5 minutes in a 2-quart saucepan.

    Beat egg yolks and add milk, cornstarch and cinnamon (mix cinnamon with cornstarch and dissolve in part of the milk first).

    Add to the raisin mixture and cook until thickened, stirring constantly.

    Pour into a baked pie shell.

    Top with meringue.
