Raisin Loaf Cake

Ingredients

  • 1 box raisins (15 oz.)
  • 2 c. water
  • 1 1/2 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 Tbsp. butter or shortening
  • 1 tsp. vanilla extract
  • 2 1/2 c. sifted flour
  • 1 tsp. baking soda
  • 2 1/2 c. sifted flour

    Place raisins, water, sugar, salt, spices and butter in saucepan.

    Bring to a boil.

    Reduce heat and simmer 10 minutes. Let cool to lukewarm.

    Stir in baking soda.

    Stir until foaming sets.

    Stir in sifted flour and turn into a well-greased loaf pan. Bake in heated oven at 350° for approximately 1 hour or until cake tester comes out clean.

    Stores good wrapped in foil until needed.
