  • 2 cups seeded raisins
  • 2 cups boiling water
  • 1 tablespoon cornstarch
  • 12 cup molasses
  • 14 teaspoon salt
  • 1 tablespoon butter
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon rind, grated

Directions

    Cool raisins and water together until tender Dissolve cornstarch in a little cold water and add along with molasses and salt.

    Remove from stove, add butter, lemon juice and rind.

    Fill a 9-inch lined pie pan.

    Cover with top crust.

    Bake at 425F for 30-40 minutes.
