- 1 c. seeded raisins
- 1 1/2 c. sugar
- 4 Tbsp. flour
- juice of 1 lemon
- 2 c. water
- 1/4 tsp. salt
- 1 egg, well beaten
- 2 Tbsp. grated lemon rind
Directions

1Wash raisins and soak in cold water for 3 hours.

2Drain; combine 2 cups water, raisins, sugar and flour.

3Also mix together with salt, lemon juice and rind and egg.

4Mix thoroughly and cook over hot water for 15 minutes, stirring occasionally.

5Let cool. Pour into empty pie shell; cover with dough strips, crisscrossed. Bake in hot oven at 450° for 10 minutes.

6Reduce heat to 350° and bake 30 more minutes.
