  • 2 eggs, slightly beaten
  • 2 c. cooked rice
  • 1 1/2 c. skim milk
  • 2 Tbsp. sugar
  • 1/2 c. raisins
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon or nutmeg
  • 1/4 tsp. salt

    Preheat oven to 350°. Combine all ingredients. Set a 1 1/2-quart baking dish in shallow pan on oven rack. Pour water to 1-inch depth around dish. Pour pudding in baking dish. Bake for 45 minutes or until knife inserted in pudding comes out clean. Yield: 8 servings.
