- 18 ounces (4 cups) fresh raspberries
- 2 cups sugar

1Stir together 3 cups raspberries and the sugar in a medium saucepan (off heat).

2Let stand 15 minutes, stirring occasionally, until berries begin to give off their juices.

3Bring mixture to a boil over medium-high heat, stirring occasionally.

4Skim off foam.

5Reduce heat; simmer, skimming foam occasionally, until slightly thickened, about 5 minutes.

6Stir in remaining raspberries; simmer just until berries break up, about 1 1/2 minutes.

7Let cool completely.

8Refrigerate until set, at least 4 hours, or up to 1 week.
