Raspberry Jam "Thumbprint Cookies"

  • 1 1/2 c. butter (3 sticks)
  • 1 c. brown sugar
  • 2 large eggs
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 2 2/3 c. flour
  • approximately 1 c. finely chopped pecans
  • approximately 1 c. thick raspberry jam

Directions

    Cream butter and sugar.

    Separate yolk from egg white (discard white).

    Add yolk, vanilla, salt and flour.

    Mix well. Shape into balls.

    Roll in pecans.
