  • 1 c. fine graham cracker crumbs (12 crackers)
  • 1/2 to 1 c. chopped English walnuts
  • 3 egg whites
  • 1/4 Tbsp. salt
  • 3/4 c. sugar
  • 1 Tbsp. lemon extract
  • 1/2 Tbsp. vanilla
  • frozen raspberries
  • whipped cream

    To the cracker crumbs, add the walnuts.

    Beat egg whites with salt; when stiff, gradually beat in sugar.

    Add lemon extract and vanilla.

    Fold in crumbs and nuts.

    Bake in buttered 9-inch pie pan at 350° for 30 minutes.

    Cool.

    Serve in wedges topped with raspberries (frozen) and juice and whipped cream.
