Raspberry Meringue Bars

- 1/2 lb. butter (room temperature)
- 1 1/2 c. sugar
- 2 egg yolks
- 2 1/2 c. flour (all-purpose)
- 1 (10 oz.) jar seedless raspberry jam
- 4 egg whites (room temperature)
- 1/4 tsp. salt
- 2 c. finely chopped walnuts
Directions

1Preheat oven to 350°.

2Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.

3Cream the butter, 1/2 cup of sugar and egg yolks in food processor with metal blade or in a mixing bowl with electric mixer until well blended.

4Add flour and mix until incorporated. Pat the dough into bottom of prepared pan.

5Bake 15 to 20 minutes until lightly browned.

6Remove from oven (leave oven on).

7Cool pastry for 5 minutes and spread with jam.
