- 10 oz. pkg. frozen sweetened raspberries
- 3 eggs
- 1 c. oil
- 3/4 c. sugar
- 3/4 tsp. cinnamon (optional)
- 3/4 tsp. soda
- 3/4 tsp. salt
- 2 1/2 c. flour
- 1/8 tsp. baking powder
Directions

1Combine raspberries, eggs, oil and sugar.

2Beat well. Add the soda, salt, flour, cinnamon and baking powder.

3Mix together well. Spray the muffin pans with any spray to prevent sticking.

4Fill the muffin pans half full.

5Bake at 350° until muffins spring back to the touch and are nice and golden.

6(Check at 15 minutes.) This recipe will make 2 small loaves or 2 dozen regular size muffins.

7If baking a loaf, you'll need to bake it for 25 to 30 minutes or until a toothpick can be inserted and comes out clean.
