Ingredients
- 1 1/2 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (optional)
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1 c. sugar
- 12 oz. frozen unsweetened, thawed or 1 1/2 c. fresh raspberries
- 2 eggs
- 2/3 c. vegetable oil
- 1/2 c. chopped nuts
Directions

1Preheat oven to 400°.

2In medium bowl, mix flour and other dry ingredients.

3Stir in undrained raspberries, eggs and vanilla. Thoroughly mix in the oil and nuts.

4Spoon into greased muffin cups (12).

5They will be very full, but won't run over.

6Bake 15 to 20 minutes; cool 5 minutes before removing from tins.
