Ingredients

  • 1 1/2 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt (optional)
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 c. sugar
  • 12 oz. frozen unsweetened, thawed or 1 1/2 c. fresh raspberries
  • 2 eggs
  • 2/3 c. vegetable oil
  • 1/2 c. chopped nuts

Directions

    Preheat oven to 400°.

    In medium bowl, mix flour and other dry ingredients.

    Stir in undrained raspberries, eggs and vanilla. Thoroughly mix in the oil and nuts.

    Spoon into greased muffin cups (12).

    They will be very full, but won't run over.

    Bake 15 to 20 minutes; cool 5 minutes before removing from tins.
