Raspberry Spinach Salad

  • 2 Tbsp. raspberry vinegar
  • 2 Tbsp. raspberry jam
  • 1/3 c. vegetable oil
  • 3/4 lb. fresh spinach, rinsed and drained
  • 3/4 c. whole toasted pecans
  • 2 kiwi fruit, peeled and sliced 1/4-inch thick
  • 1 c. fresh raspberries

    In blender or with whisk, blend vinegar and jam.

    Add salad oil in a thin stream.

    Set aside.

    Mix spinach, half of nuts, half of raspberries and all of dressing.

    Top salad with remaining nuts, berries and kiwi fruit.

    Mix lightly before serving.
