  • olive oil
  • 2 onions, peeled and finely chopped
  • 2 peppers, seeded and chopped
  • 3 or 4 zucchini, thinly sliced
  • 1 small eggplant
  • 4 tomatoes, peeled, seeded and chopped
  • 1/2 c. chopped parsley
  • 1 garlic clove, crushed
  • salt and pepper
  • grated Parmesan cheese

Directions

    Heat oil in heavy skillet; saute onions until they begin to color.

    Add peppers; saute a few more minutes.

    Add zucchini and eggplant (adding a little more oil if necessary).

    Cook about 5 minutes.

    Turn vegetables into large casserole.

    Add tomatoes; cover.

    Cook in preheated 250° oven for 1 1/4 hours.

    Add parsley, garlic and seasoning; cook 20 minutes.

    Sprinkle generously with cheese before serving.
