- olive oil
- 2 onions, peeled and finely chopped
- 2 peppers, seeded and chopped
- 3 or 4 zucchini, thinly sliced
- 1 small eggplant
- 4 tomatoes, peeled, seeded and chopped
- 1/2 c. chopped parsley
- 1 garlic clove, crushed
- salt and pepper
- grated Parmesan cheese
Directions

1Heat oil in heavy skillet; saute onions until they begin to color.

2Add peppers; saute a few more minutes.

3Add zucchini and eggplant (adding a little more oil if necessary).

4Cook about 5 minutes.

5Turn vegetables into large casserole.

6Add tomatoes; cover.

7Cook in preheated 250° oven for 1 1/4 hours.

8Add parsley, garlic and seasoning; cook 20 minutes.

9Sprinkle generously with cheese before serving.

10Yield: 4 servings.
