- 1 small eggplant, unpeeled and diced
- 2 medium zucchini, unpeeled and diced
- 1 green pepper, chopped
- 2 medium onions, chopped
- 3/4 c. olive oil
- 6 tomatoes, quartered
- 1 tsp. salt
- 1 tsp. fresh basil
- 1/2 tsp. pepper
- 1 c. grated Parmesan cheese
Directions

1Salt and drain eggplant on paper towel for 20 minutes.

2Saute eggplant, zucchini, pepper and onions in olive oil until lightly browned.

3Stir in tomato, salt, basil and pepper. Transfer to a casserole dish.

4Bake at 325° for 1 1/2 hours or cook on top of stove in heavy pot.

5Top with cheese, bake another half hour.
