- 2 lb. tomatoes, peeled and chopped
- 1/2 c. oil
- 3 medium onions, thickly sliced
- 3 cloves garlic, minced
- 2 red peppers, cut in sq.
- 1 lb. zucchini, sliced
- 1 eggplant, peeled and cubed or summer squash
- salt and pepper
- pinch of sugar
Directions

1Heat 1/2 the oil and simmer the tomatoes for 10 minutes.

2In another frypan, heat the remaining oil and saute the onions and garlic for 5 minutes.

3Add the pepper, zucchini and eggplant to the onions.

4Cook over a low heat for 15 minutes, stirring frequently.

5Add the tomatoes, salt and pepper to taste and a pinch of sugar.

6Cook until vegetables are tender.
