Ingredients

  • 2 lb. tomatoes, peeled and chopped
  • 1/2 c. oil
  • 3 medium onions, thickly sliced
  • 3 cloves garlic, minced
  • 2 red peppers, cut in sq.
  • 1 lb. zucchini, sliced
  • 1 eggplant, peeled and cubed or summer squash
  • salt and pepper
  • pinch of sugar

Directions

    Heat 1/2 the oil and simmer the tomatoes for 10 minutes.

    In another frypan, heat the remaining oil and saute the onions and garlic for 5 minutes.

    Add the pepper, zucchini and eggplant to the onions.

    Cook over a low heat for 15 minutes, stirring frequently.

    Add the tomatoes, salt and pepper to taste and a pinch of sugar.

    Cook until vegetables are tender.
