- 1/2 c. olive oil
- 1 c. thinly sliced onions
- 1 clove garlic, minced
- 1 medium zucchini, cut in 1/2 inch slices
- 1 medium eggplant cut into 1/2 inch slices
- 2 green peppers cut into strips
- 1 tsp. salt
- 1 tsp. oregano
- 1/4 tsp. black pepper
- 2 tomatoes cut in wedges
Directions

1Heat oil in skillet.

2Saute onions till slightly soft.

3Move onions to side and cook garlic for one minute.

4Mix into onions. Add remaining ingredients except tomatoes.

5Stir to mix.

6Cover and simmer gently, 30 minutes.

7Add tomatoes and heat just enough to warm them through.

8Do not allow them to cook.
-
9May be served cold.
