Ingredients

  • 1/2 c. olive oil
  • 1 c. thinly sliced onions
  • 1 clove garlic, minced
  • 1 medium zucchini, cut in 1/2 inch slices
  • 1 medium eggplant cut into 1/2 inch slices
  • 2 green peppers cut into strips
  • 1 tsp. salt
  • 1 tsp. oregano
  • 1/4 tsp. black pepper
  • 2 tomatoes cut in wedges

Directions

    Heat oil in skillet.

    Saute onions till slightly soft.

    Move onions to side and cook garlic for one minute.

    Mix into onions. Add remaining ingredients except tomatoes.

    Stir to mix.

    Cover and simmer gently, 30 minutes.

    Add tomatoes and heat just enough to warm them through.

    Do not allow them to cook.

    May be served cold.
