- 2 lb. pork chops (lean)
- 6 to 7 large green chilies (Anaheim are okay)
- 3 large tomatoes
- 1 large onion (any color)
- 3 large cloves garlic
- vegetable oil
- flour
- salt
Directions

1Cover bottom of large pot with oil and warm.

2Cube pork; mince garlic and chop onion.

3Put pork, garlic, 1/4 of onion and desired salt in pot and brown; sprinkle 2 tablespoons of flour while stirring and browning meat.

4When brown, turn down heat.

5Chop tomatoes and chilies and add with the rest of the onion to the meat; add 1 quart of water and boil.

6Boil water out 3 times or until all ingredients are very soft.

7Lower heat when thick or add cornstarch.

8Great on burritos, eggs, fried potatoes, rice.
