Really Good Rice Pudding

Ingredients

  • 6 cups whole milk
  • 34 cup carolina rice
  • 1 cup heavy cream
  • 34 cup sugar
  • 3 egg yolks, beaten
  • 2 teaspoons vanilla
  • 14 teaspoon salt
  • 1 teaspoon cinnamon

Directions

    Rinse a medium saucepan with cold water (don't dry).

    Pour in milk & bring to a boil over medium heat.

    Stir in rice & return to a boil.

    Reduce heat, and simmer, uncovered.

    until rice is tender (about 55 minutes) stirring occasionally.

    Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla.

    and salt.

    Set aside.

    When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot.

    Heat to a slow boil.

    Remove from heat.

    and pour into a 2 quart dish.

    sprinkle with cinnamon and enjoy!
