Ingredients
- 6 cups whole milk
- 34 cup carolina rice
- 1 cup heavy cream
- 34 cup sugar
- 3 egg yolks, beaten
- 2 teaspoons vanilla
- 14 teaspoon salt
- 1 teaspoon cinnamon
Directions

1Rinse a medium saucepan with cold water (don't dry).

2Pour in milk & bring to a boil over medium heat.

3Stir in rice & return to a boil.

4Reduce heat, and simmer, uncovered.

5until rice is tender (about 55 minutes) stirring occasionally.

6Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla.

7and salt.

8Set aside.

9When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot.

10Heat to a slow boil.

11Remove from heat.
-
12and pour into a 2 quart dish.

13sprinkle with cinnamon and enjoy!
