Red Bean Soup

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Medium Onion, Finely Diced
  • 2 cloves Garlic, Chopped
  • 1/2 teaspoons Caraway Seeds
  • 800 grams Cooked Red Beans, Drained
  • 1 liter Vegetable Stock
  • 1/3 cups Fresh Parsley, Washed
  • Sour Cream, For Garnish (optional)

Directions

    Heat oil in a large pot. Add onion and saute until translucent over low to medium hea). Add garlic and caraway seeds. Saute for a minute before adding drained beans.

    Pour in stock. Add parsley and bring it to a boil. Reduce heat and simmer for 5 minutes. Puree until smooth.

    Serve warm with a few slices of bread and sour cream (optional). Enjoy!
