- 2 Tablespoons Extra Virgin Olive Oil
- 1 Medium Onion, Finely Diced
- 2 cloves Garlic, Chopped
- 1/2 teaspoons Caraway Seeds
- 800 grams Cooked Red Beans, Drained
- 1 liter Vegetable Stock
- 1/3 cups Fresh Parsley, Washed
- Sour Cream, For Garnish (optional)
Directions

1Heat oil in a large pot. Add onion and saute until translucent over low to medium hea). Add garlic and caraway seeds. Saute for a minute before adding drained beans.

2Pour in stock. Add parsley and bring it to a boil. Reduce heat and simmer for 5 minutes. Puree until smooth.

3Serve warm with a few slices of bread and sour cream (optional). Enjoy!
