- 1 small bell pepper, chopped
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 2 Tbsp. oil
- 1 can red kidney beans or pinto beans, undrained
- 1 c. cooked rice
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Cook and stir first 4 ingredients in hot oil over medium-high heat until tender, but not browned, about 5 minutes.

2Stir in beans with liquid, cooked rice, salt and pepper.

3Reduce heat and stir gently until beans are hot.
