- 16 oz. can beets
- 3/4 c. sugar
- 1 Tbsp. mixed pickling spices
- 1 c. vinegar
- 1 Tbsp. salt
- 6 hard-cooked eggs
- 1 medium onion, thinly sliced and separated in rings
Directions

1Drain beets, reserving liquid into glass bowl or jar.

2Add vinegar, sugar, salt and spices.

3Stir until sugar dissolves.

4Add beets, eggs and onions.

5Cover.

6Chill 2 hours or longer before serving.

7Drain eggs and serve in one dish, onions and beets in another.
