- 5 large red onions (about 3 lb.)
- 4 Tbsp. butter
- salt and pepper
- 3/4 c. red wine
- 5 c. chicken stock
- 3/4 tsp. dried thyme
- 4 slices French or Italian bread
- 1/3 c. grated Swiss cheese
- 1 Tbsp. chopped fresh parsley
Directions

1Slice onions.

2Melt 3 tablespoons of the butter in a large pan.

3Add onions and 1 teaspoon salt.

4Cook over medium-low heat, stirring occasionally, until golden, 30 to 40 minutes.

5Add wine and cook 5 minutes.

6Add stock and thyme.

7Cook 15 minutes. Season to taste with salt and pepper.
