Red Snapper Stew

Ingredients

  • 2 cups onions chopped
  • 1 cup celery chopped
  • 1/2 cup green bell peppers chopped
  • 1 each garlic cloves
  • 1 x nonstick cooking spray
  • 1 1/2 cups water
  • 1 teaspoon chicken broth
  • 1 cup white wine chablis
  • 1 large potatoes cubed
  • 14 1/2 ounces tomatoes chopped, whole
  • 1/4 teaspoon salt
  • 1 each bay leaves
  • 1 1/2 pounds red snapper fillets skinned
  • 1 x parsley leaves chopped

Directions

    Saute first 4 ingredients in a large Dutch oven coated with cooking spray until tender.

    Stir in next 7 ingredients, bring to a boil.

    Cover, reduce heat, and simer 20 minutes.

    Cut fish into 1 inch cubes, and add to stew.

    Cover and simmer 10 minutes or until fish flakes easily when tested with a fork.

    Discard bay leaf.

    Garnish with parsley.
