- 1 medium to large onion, sliced
- 1/2 red pepper, sliced
- 1 c. stuffed green olives, sliced
- 1/2 c. + 3 Tbsp. orange juice
- 2 Tbsp. lemon juice
- 1/4 tsp. coriander
- 1/4 tsp. cilantro
Directions

1Preheat oven to 400°.

2In large skillet over medium heat, saute the onions, red pepper and olives.

3Lay fish filets on top of sauteed onion, peppers and olives.

4Add 3 tablespoons orange juice, 2 tablespoons lemon juice, and 1/4 teaspoon coriander.

5Bake in 400° oven for 12 minutes.

6While fish is baking, mix a bit of cornstarch and water to thicken sauce.
