Red Wine And Raspberry Granita

  • 1 cup red wine
  • 1/2 cup sugar
  • 1 10-oz. bag frozen raspberries, thawed
  • 1 1/2 tablespoons fresh lemon juice

Directions

    Combine wine, sugar and 1 cup water in a small saucepan. Bring to a boil over high heat, stirring occasionally, until sugar is dissolved, about 5 minutes.

    In a blender, puree berries until smooth. Strain through a fine strainer into a medium bowl, pressing on solids before discarding them. Stir wine mixture and lemon juice into liquid.

    Pour into a nonreactive, shallow metal pan or bowl. Freeze, raking mixture with a fork after 1 1/2 hours and then every 30 minutes until it looks like flaked ice, about 3 1/2 hours total.
