Refrigerator Mashed Potatoes

  • 5 lb. potatoes, pared and quartered
  • 2 (3 oz.) pkg. cream cheese
  • 1 (16 oz.) sour cream
  • 2 tsp. onion salt
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. butter
  • grated Cheddar cheese

Directions

    Cook potatoes; mash.

    Add cream cheese, sour cream, onion salt, salt, pepper and butter.

    Spread in a 9 x 13-inch pan. Cover.

    Refrigerate for at least 2 days.

    (Can store up to two weeks.)

    When ready to use, top with Cheddar cheese (lots) and bake at 350° for 30 to 35 minutes.
