  • 8 c. sliced cucumbers
  • 1 c. thinly sliced celery
  • 1 1/2 Tbsp. salt
  • 2 c. sugar
  • 1 green pepper, thinly sliced
  • 1 c. white vinegar
  • 1 large onion, chopped
  • 1 (3/4 oz.) jar pimento, chopped
  • 1 tsp. celery seed
  • 1 tsp. mustard seed

    Mix cucumbers, celery, green pepper, onion, pimento and salt in large bowl.

    Let stand 1 hour; drain well.

    Meanwhile, mix sugar, vinegar and seeds in saucepan.

    Heat to boil.

    Stir until sugar is dissolved.

    Let cool.

    Pour over vegetables.

    Refrigerate covered until cold.

    Store in glass jars in the refrigerator up to 2 months.
