- 1 (1 lb.) can sauerkraut, well drained
- 1 large can corned beef
- 2 c. Swiss cheese, crumbled
- 1/2 c. mayonnaise
- 1/4 c. Thousand Island dressing
- 2 Tbsp. melted butter
- 1/2 c. plain bread crumbs (more crumbs and more butter add flavor)
- sliced tomatoes (over top if desired; optional)
Directions

1Layer everything in a 1 or 2-quart casserole with buttered crumbs on top and bottom.

2On bottom, put 1/2 buttered bread crumbs, next corned beef, next sauerkraut, next mayo and Thousand Island dressing, mixed, next Swiss cheese and top with buttered bread crumbs.

3Add tomatoes, if desired.

4Bake at 350° for 1/2 hour to 45 minutes.

5Serves 4 to 6.
