Rhubarb Applesauce

  • 4 c. (1 lb.) rhubarb
  • 2 lb. tart cooking apples (such as Granny Smith, Rome or MacIntosh)
  • 1 c. sugar
  • 1/2 tsp. nutmeg

    Trim the rhubarb and cut it into chunks.

    Peel and core the apples and cut them into chunks.

    Combine the rhubarb and the apples with sugar in a large pot.

    Simmer over medium-low heat until the fruit is soft, 20 to 25 minutes.

    Stir in the nutmeg. Serve the applesauce warm, room temperature or cold.
