- 2 Tbsp. cornstarch
- 1/4 c. water
- 3 c. rhubarb
- 1 1/2 c. sugar
- 1 tsp. vanilla
- dash of cinnamon
- dash of salt
- 1 1/2 c. oatmeal
- 1 1/2 c. flour
- 1 c. brown sugar
- 1 tsp. baking soda
- 1 c. shortening
- 1/2 c. chopped nuts
Directions

1Blend cornstarch and water.

2Mix next 4 ingredients.

3Stir in cornstarch mixture.

4Cook until thickened.

5Cool.

6Mix remaining ingredients until crumbly.

7Pat 3/4 of crumb mixture into 9 x 13-inch pan.

8Pour in rhubarb mixture; sprinkle with remaining crumb mixture.

9Bake at 375° for 40 minutes.

10Cool; cut into bars.
