Ingredients
- 1-1/2 c. brown sugar
- 3/4 c. buttermilk
- 2/3 c. oil
- 1 egg
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. vanilla
- 1-1/2 c. chopped rhubarb
- 1/2 c. chopped nuts
- 1/2 c. sugar
- 1 Tbsp. margarine
Directions

1Combine sugar with margarine for topping and set aside.

2Heat oven to 325°.

3Grease the bottom of two 8 x 4 inch loaf pans. Combine brown sugar, buttermilk, oil and eggs, and blend until smooth.

4Add the flour and mix well.

5Stir in the rhubarb and the nuts.

6Pour into pans.

7Sprinkle with a topping of 1/2 c. sugar mixed with 1 Tbsp. margarine.

8Bake for 50-60 minutes, or until bread tests done.

9Cool in pan 10 minutes then remove to wire rack and cool completely.
