- 2 c. all-purpose flour
- 1 1/4 c. whole-wheat flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. salt (if desired)
- 2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/4 tsp. nutmeg
- 1 egg white
- 2 whole eggs
- 1 c. vegetable oil
- 1 1/4 c. packed dark brown sugar
- 2 tsp. vanilla
- 2 1/2 c. diced rhubarb
- 3/4 c. chopped walnuts
Directions

1In a medium bowl, combine the flours, baking soda, baking powder, salt, cinnamon, allspice and nutmeg.

2In a large mixing bowl, combine the egg white, whole eggs, oil, brown sugar and vanilla.

3Beat the mixture with an electric mixer on high speed until fluffy.

4Stir in the flour mixture until it is just moistened.

5Stir in the rhubarb and walnuts.

6Divide the batter between 2 greased 9 x 5 x 3-inch loaf pans.

7Bake in preheated 350° oven for about 50 minutes or until a pick inserted in the center comes out clean.

8Set the pans on a rack for 10 minutes, then turn out the loaves to cool completely.

9Makes 2 loaves.
