Ingredients
- 1 1/2 c. brown sugar, firmly packed
- 2/3 c. vegetable oil
- 1 egg
- 1 c. buttermilk
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. vanilla
- 2 1/2 c. flour
- 2 c. rhubarb, diced
- 1/2 c. chopped walnuts (optional)
- 1/4 c. sugar
- 1 Tbsp. butter or margarine
Directions

1Combine brown sugar and oil.

2Stir in egg, buttermilk, salt, soda, vanilla and flour; mix well.

3Fold in rhubarb and nuts.

4Pour into 2 greased and floured loaf pans.

5In a small bowl, combine sugar and margarine.

6Sprinkle over batter.

7Bake at 350° for 50 to 55 minutes.

8Done when toothpicks come out clean.

9Cool and serve with margarine, cream cheese or Cool Whip.
