- 3 cups sugar
- 1 1/3 cups oil
- 2 eggs
- 2 cups buttermilk
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 teaspoons vanilla
- 5 cups flour
- 3 cups rhubarb, diced
- Topping
- 1 1/2 cups sugar
- 3 tablespoons butter, melted
- 3 teaspoons cinnamon
Directions

1Beat together the following ingredients: sugar, oil, eggs, buttermilk, salt, baking soda, vanilla, flour. Add rhubarb.

2Put 1/2 dough in 3 loaf pans (don't overfill!).

3Add half of topping.

4Add other half of dough, then the rest of the topping.

5Bake at 350 for 1 1/2 hours.
