Rhubarb Brunch Cake

- 1 pkg. yellow cake mix, including oil, water and eggs (specified on pkg.)
- 4 c. sliced fresh or frozen rhubarb (unthawed)
- 1 c. sugar
- 1 pt. (2 c.) whipping cream
Directions

1Heat oven to 350°.

2Grease and flour a 9 x 13-inch cake pan. In large bowl, mix and prepare cake mix according to package directions (don't forget the high altitude adjustments).

3Pour into greased and floured pan.

4Top with rhubarb.

5Sprinkle with sugar. Pour cream over top.

6Bake at 350° for 1 1/4 to 1 1/2 hours, or until toothpick inserted into center comes out clean.

7Serve warm. Store in refrigerator.
