  • 1/2 c. softened butter
  • 1 1/2 c. sugar
  • 1 egg
  • 1 c. buttermilk
  • 2 c. flour (reserve 2 Tbsp.) to mix with rhubarb
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. diced rhubarb (fresh or frozen)

Directions

    Cream together butter, sugar and egg.

    Add buttermilk alternately with combined flour, soda, salt and cinnamon.

    Mix until smooth.

    Add vanilla.

    Toss rhubarb with flour.

    Add to mixture.

    Spread in greased and floured 13 x 9 x 2-inch cake pan. Bake at 350° for 35 minutes.
