- 1/2 c. softened butter
- 1 1/2 c. sugar
- 1 egg
- 1 c. buttermilk
- 2 c. flour (reserve 2 Tbsp.) to mix with rhubarb
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 2 c. diced rhubarb (fresh or frozen)
Directions

1Cream together butter, sugar and egg.

2Add buttermilk alternately with combined flour, soda, salt and cinnamon.

3Mix until smooth.

4Add vanilla.

5Toss rhubarb with flour.

6Add to mixture.

7Spread in greased and floured 13 x 9 x 2-inch cake pan. Bake at 350° for 35 minutes.
