Rhubarb Cake

Ingredients
- 2 c. rhubarb, diced
- 1/2 c. sugar
- 1/2 c. shortening
- 1 1/2 c. white sugar
- 1 egg
- 2 c. flour
- 1 tsp. soda
- 1 c. sour milk or buttermilk
- dash of salt
- 1 tsp. cinnamon
- 1 tsp. vanilla
Directions

1Mix diced rhubarb with the 1/2 cup sugar and let stand until batter is mixed.

2Cream shortening and 1 1/2 cups sugar.

3Add egg. Then add sifted dry ingredients alternately with milk and vanilla. When cake is mixed, add rhubarb mixture to batter.

4Blend.

5Bake 1 hour at 350° or until done in 9 x 13-inch greased pan.

6Serve warm with ice cream or whipped topping.

7If serving cold, sprinkle sugar and cinnamon on top before baking.
