- 1 1/2 c. brown sugar
- 1/2 c. butter or margarine
- 1 egg
- 2 c. flour
- 1 c. raw rhubarb (1-inch pieces)
- 1/2 tsp. salt
- 1 tsp. soda
- 1 c. buttermilk or cultured sour cream makes this cake extra delicious
Directions

1Cream sugar and shortening; add egg.

2Sift and measure dry ingredients.

3Add alternately with buttermilk or sour cream. Spread some rhubarb in bottom of 9 x 13-inch pan.

4Add remaining rhubarb to batter and spread over pan.

5Top with 2/3 cup sugar and 2 teaspoons cinnamon (well mixed).

6Bake 40 minutes at 350°.
