  • 2 1/2 c. rhubarb
  • 1/4 c. sugar
  • 3/4 c. shortening (part butter)
  • 3/4 tsp. salt
  • 1 3/4 c. brown sugar or white
  • 1 1/2 tsp. vanilla
  • 2 eggs
  • 1 1/2 c. buttermilk
  • 1 1/2 tsp. soda
  • 3 c. flour
  • 1 to 2 tsp. cinnamon

    Chop the rhubarb into 1/4-inch pieces; sprinkle with 1/4 cup sugar and set aside.

    Cream the shortening, salt, 1 3/4 cups brown or white sugar and vanilla.

    Add the eggs.

    Add alternately the buttermilk, soda, flour and cinnamon.

    Mix in rhubarb.

    Bake in a 9 x 13-inch pan at 350° for 45 minutes.
