- 3 eggs
- 1 c. salad oil
- 1 Tbsp. vanilla
- 1 3/4 c. sugar
- 2 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 4 c. diced rhubarb
- 1 c. chopped nuts
Directions

1Beat together the eggs, oil and vanilla.

2Mix together the flour, sugar, salt, soda and cinnamon.

3Add to egg mixture.

4Stir in rhubarb and nuts.

5This makes a muffin-like batter.

6Bake in greased 9 x 13-inch pan at 350° for 50 to 60 minutes.
