  • 3 eggs
  • 1 c. salad oil
  • 1 Tbsp. vanilla
  • 1 3/4 c. sugar
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 4 c. diced rhubarb
  • 1 c. chopped nuts

Directions

    Beat together the eggs, oil and vanilla.

    Mix together the flour, sugar, salt, soda and cinnamon.

    Add to egg mixture.

    Stir in rhubarb and nuts.

    This makes a muffin-like batter.

    Bake in greased 9 x 13-inch pan at 350° for 50 to 60 minutes.
