  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 1 egg
  • 1/2 tsp. salt
  • 2 c. flour
  • 1 tsp. soda
  • 1 c. buttermilk
  • 1 1/2 c. rhubarb, diced

Directions

    Cream shortening and sugar together.

    Add rest of ingredients except rhubarb.

    Mix and then fold in diced rhubarb.

    Bake about 25 minutes at 350° in 9 x 13-inch pan.

    Good with a light glaze.
