Rhubarb Custard

  • 1 c. sugar
  • 1 Tbsp. butter or oleo
  • 1 Tbsp. flour
  • 2 eggs, separated
  • 1 c. milk
  • 1 c. rhubarb, cut fine

Directions

    Cream sugar and butter, then add eggs (yolks) and mix well. Add milk.

    Spread finely cut rhubarb in bottom of unbaked 9-inch pie shell.

    Add stiffly beaten egg whites to the custard mixture, then pour it over the rhubarb in the pie shell.

    Bake in 350° oven for 60 minutes or until point of knife inserted in center comes out clean.
