Rhubarb Nut Bread

Ingredients

  • 1 1/2 c. brown sugar
  • 2/3 c. vegetable oil
  • 1 egg
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 c. buttermilk
  • 2 3/4 c. flour, spooned into cup
  • 1 1/2 c. chopped rhubarb
  • 1/2 c. chopped walnuts
  • 1 1/2 Tbsp. butter (room temperature)
  • 1/2 c. sugar

Directions

    Beat together (in a large bowl) brown sugar, egg and oil until creamy.

    Mix in soda, vanilla and milk. Add flour, rhubarb and nuts.

    Pour into 2 greased and floured loaf pans (8 x 4 1/2-inch). Dot tops with butter and sprinkle with sugar. Bake at 325° for 1 hour until golden.
