  • 1 1/2 c. sugar
  • 1 egg, beaten
  • 1 1/2 Tbsp. flour
  • 2 c. rhubarb, cut in 1-inch pieces

    Mix sugar and flour thoroughly; add egg and mix well.

    Mix in rhubarb.

    Line pan with pastry; fill with rhubarb mixture and arrange pastry strips lattice fashion over filling.

    Bake in hot (400°) oven for 20 minutes.

    Reduce heat to moderate (350°) and bake 25 minutes longer.

    Makes one 9-inch pie.
