- 1 1/2 c. sugar
- 1 egg, beaten
- 1 1/2 Tbsp. flour
- 2 c. rhubarb, cut in 1-inch pieces
Directions

1Mix sugar and flour thoroughly; add egg and mix well.

2Mix in rhubarb.

3Line pan with pastry; fill with rhubarb mixture and arrange pastry strips lattice fashion over filling.

4Bake in hot (400°) oven for 20 minutes.

5Reduce heat to moderate (350°) and bake 25 minutes longer.

6Makes one 9-inch pie.
