Rhubarb Pie

  • 1 (9-inch) pie crust, unbaked
  • 3 to 4 c. rhubarb, cleaned and cut into 1 to 1 1/2-inch pieces
  • 4 eggs or 1 carton Egg Beaters
  • 3/4 c. sugar

Directions

    Dust inside of pie crust with 1 or 2 tablespoons of flour. Fill shell to heaping with rhubarb pieces.

    Beat together eggs and sugar, then pour over rhubarb.

    Bake at 400° for 10 minutes. Reduce oven temperature to 350° and continue to bake for 30 to 45 minutes.
