- 1 1/2 to 2 c. sugar (I use 1 1/2)
- 3 Tbsp. flour
- 1/8 tsp. cinnamon or more
- 2 beaten eggs
- 3 c. rhubarb, cut small
Directions

1Mix dry ingredients; pour in beaten eggs.

2Mix well.

3Add the rhubarb and mix well.

4Bake at 450° for 10 minutes, then at 350° for 20 minutes or whatever time it takes for crust to brown and custard to set.

5Some of rhubarb will come to the top.
