Rhubarb Pie

Ingredients

  • 1 1/2 to 2 c. sugar (I use 1 1/2)
  • 3 Tbsp. flour
  • 1/8 tsp. cinnamon or more
  • 2 beaten eggs
  • 3 c. rhubarb, cut small

Directions

    Mix dry ingredients; pour in beaten eggs.

    Mix well.

    Add the rhubarb and mix well.

    Bake at 450° for 10 minutes, then at 350° for 20 minutes or whatever time it takes for crust to brown and custard to set.

    Some of rhubarb will come to the top.
