  • 4 c. cut-up rhubarb
  • 1 1/2 c. sugar
  • 1/8 tsp. salt
  • 1/4 tsp. nutmeg
  • 1 1/2 Tbsp. flour
  • 3 eggs, beaten
  • 2/3 c. evaporated milk

Directions

    Combine sugar, salt, nutmeg and flour.

    Toss with rhubarb. Turn into pastry-lined pan.

    Stir milk into eggs and pour over rhubarb.

    Top with a lattice crust.

    Bake at 450° for 15 minutes. Reduce heat to 350° and bake an additional 25 minutes.
